Corn Sticks

I no longer own a corn stick pan (they are the most difficult cast iron to refresh when rust appears). However, I discovered that Mrs. Stickinthemud’s corn stick recipe, also makes perfect corn cakes on the griddle.  Many proclamations of “mmmm” and “yummy” emanated from the table and filled this cook’s ears.  Sean, who is only five, gobbled four of these.  Of course, it helped to have homemade strawberry syrup oozing over the tops of the cakes.

The flavour of these corn cakes resembled pancakes more than corn bread. The cornmeal flavour was there though, and these also had the advantage of an awesome cornmeal crunch.  And, also unlike pancakes, these do not have grease within the batter.  Aided with a nonstick pan, I used perhaps one teaspoon of safflower oil to cook the entire batch (and I I doubled the recipe).

P.S… I sent Mumsy home with a couple corn cakes for my Pa, and he loved them!

Corn Sticks (as Corn Cakes)

  • Yield: 15 Corn Cakes (4 inch)

Ingredients

  • 1 1/2 cups White Cornmeal
  • 1/2 cup All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 tablespoon Baking Powder
  • 1 teaspoon Sugar
  • 1 Egg, beat until light
  • 2 cups Buttermilk (or regular milk soured with 2 Tablespoons lemon juice)
  • Oil for the pan (I use safflower)

Method

  • Sift dry ingredients.
  • Combine the egg with the buttermilk/sour milk.
  • Add buttermilk mixture to the dry ingredients, and stir well with a spoon.
  • Lightly grease a pancake skillet, and warm at medium heat. Spoon the batter onto the skillet, and turn when the raw side loses its shine. Serve them hot with butter, syrup, jam, and/or honey.
