Lemon Sponge

Ingredients

  • 3 tablespoons Flour
  • 3/4 cup Sugar
  • 3/4 teaspoon Salt
  • 3 Egg Yolks, slightly beaten
  • 3/4 cup Evaporated Milk
  • 3/4 cup Water
  • 1 tablespoon Lemon Zest
  • 3 tablespoons Lemon Juice
  • 3 Egg Whites, stiffly beaten

Method

  • Preheat oven to 350 degrees.
  • Mix together the flour, sugar and salt.
  • Add egg yolks.
  • Stir in the evaporated milk and water.
  • Slowly stir in lemon zest and juice.
  • Fold in egg whites.
  • Pour into a well-greased 8×8 baking dish. Place in the oven in a pan of hot water (I use a 9×13), with the water reaching about 1/2 up the 8×8 dish. Bake for 45 minutes to 1 hour, or until brown. Be gentle with it while it cools on a rack.
